Brown Rice Salad

Ingredients
- 3 cup brown rice
- 0.5 cup currant
- 1 garlic clove
- 2 tbsp lemon juice
- 2 tbsp pepita
- 1 red capsicum
- 4 tbsp soy sauce
- 6 spring onions
- 0.25 cup sunflower oil
- 2 tbsp sunflower seed
Method

Cook rice: and place cooked rice, spring onion, capsicum, currants and seeds in a bowl and toss.

Shake together: oil, soy sauce, lemon juice and garlic and pour over salad prior to serving.
