Chickpea and Cauliflower Salad
Salad Chickpeas 30 min
Ingredients
- 1 avocado
- 1 cauliflower
- 1 chickpea
- 1 tsp garlic powder
- 2.5 tbsp honey
- 0.5 lime
- 3 tbsp olive oil
- 0.75 tbsp paprika
- 0.5 cup parsley
- 0.333 cup red onion
- 0.75 tsp salt
- 0.25 cup sunflower seed
Method
- 1.
Preheat oven: to 220°C
- 2.
Add cauliflower and chickpeas: to a bowl. Toss with 2 Tbs olive oil, 1.5 Tbs honey, paprika, garlic powder and salt. Toss to combine.

Spread mixture: onto a sheet pan. Roast for 30-35mins until tender and brown.
- 4.
Add: roast cauliflower and chickpeas to a bowl. Add avocado, parsley, lime and onion. Add remaining olive oil and honey. Toss to combine.
- 5.
Transfer: to a plate and top with sunflower seeds.
