Guacamole

Ingredients
- 3 avocados
- 1 coriander
- 1 jalapeno
- 1 lime
- 0.5 tsp salt
- 1 tomato
- 0.25 white onion
Method
- 1.
Halve and pit the avocados. Scoop the flesh into a bowl.
- 2.
Mash roughly with a fork — keep it chunky.
- 3.
Stir in onion, chile, coriander, lime juice, and salt.
- 4.
Fold in tomato if using.
- 5.
Taste. Adjust salt and lime.
- 6.
Top with extra coriander. Serve immediately.
Tips
- Chunky beats smooth. Don't over-mash.
- Press cling film directly onto the surface if storing — slows browning.
- Lime stops oxidation and lifts the avocado flavour. Don't skip.
Substitutions
- Hass avocados: the dark, bumpy ones. Avoid Shepard or smooth green varieties — too watery.
- Serrano: jalapeño, or 1 tsp finely chopped pickled jalapeño.
- White onion: see salsa mexicana — brown onion soaked 10 min in cold water.
