Mixed Berry Muffins

Ingredients
- 100 g butter
- 1 cup caster sugar
- 2 eggs
- 200 g frozen mixed berry
- 1 tsp lemon rind
- 1 cup milk
- 2.25 cup self raising flour
- 1 tsp vanilla essence
Method

Preheat oven: to 180°. Grease 6 hole Texas muffin pan or spray 6 large disposable muffin cases and place on an oven tray.

Sift flour: into large bowl; add sugar then combine extract, egg, butter, milk and rind. Add berries and stir thorough gently.
- 3.
Divide muffin mixture: among holes of prepared pans.
- 4.
Bake muffins: in oven for about 35 minutes. Stand muffins in pan for a few minutes before turning onto a wire rack.
